Easy Garlicy Potatoes
I made these for brunch on a Sunday morning (with what I had on hand)and my boyfriend who is not a potato fan said he liked these! I topped mine off with plain hummus but try your hand at anything (or nothing) as you wish!
Easy Garlicy Potatoes
--------------------------------------
3 red potatoes - scrubbed clean
2 new potatoes - scrubbed clean
1 tablespoon Earth Balance
1 teaspoon olive oil
2 tablespoons of nutritional yeast
1 teaspoons of garlic powder
pinch of salt and pepper
plastic zip lock bag
Preheat your oven to 400 degrees. Cube the potatoes into bite sized chunks and place into the plastic bag. Melt the EB in a pan over the stove (or in the microwave), let cool, add olive oil. Pour liquid into the bag, coating the potatoes. Sprinkle on the nutritional yeast, garlic powder, salt and pepper. Zip the bag, shake to coat the potatoes. Used a lined or oiled pan and bake for 20-30 minutes until the potatoes are fork tender/cooked to the core! Enjoy!
